Fabulous Dinner & Dessert
This week I have been on a kick of making new (to me) meals. My favorite meal so far has been the Glazed Lentil Walnut Apple Loaf (yum!) and my favorite dessert – the Double Chocolate Crispy Frozen Dessert Bars (drool-worthy).
I’ve never before attempted a meat-less meatloaf before, so I was happily surprised to find this ‘meatloaf’ so good! I love how it is packed with nutrients, but my honest-to-goodness favorite part is the glaze. Next time I think I will triple the glaze and then layer the loaf and the glaze alternatively in order to get as much as that flavor in there as possible. It’s really that good. 🙂
I loved how this loaf was loaded with lentils, carrots, celery, flax seed, apple, raisins, and more.
Sadly, I forgot to take a picture of the final product on a plate because a. It looked amazing and b. I was starving that I just devoured it upon dinner time and c. I was too lazy to pull out a clean dish just for a picture as that meant I would have another dish to wash. (Lazy or smart, I never know). Just having this dish would have been enough to have made my day, but why stop there? 🙂 Enter the Double Chocolate Dessert Bars. Seriously. They are to die for. And the best part? They’re vegan (cashew-based), gluten-free, and no-bake! They’re quick and easy and, in my opinion, super healthy. 😉 What’s not to love?!
The crispy rice part didn’t turn out as crispy as I had hoped, so if you think of another crispy alternative, let me know. I think next time I might just skip the crispy part and make just the ‘fudge’ part, which will only make this quick recipe even quicker!
As delicious as these two dishes turned out, my truly favorite part of it all was having my 3 year old helper alongside of me. She seriously makes cooking/baking way more fun. 🙂 It takes more time, but I hope that these moments will become cherished memories for her. They certainly have for me. <3
